Yummy Vegan Tahini Pasta Recipe

A simple, comforting bowl with bold, nutty depth. I first tried this several years ago for my son's school's teacher appreciation day and have been hooked ever since. SO easy and delicious!
What You'll Need:
- 8 oz of your favorite pasta (spaghetti or fettuccine work great)
- 1/2 cup tahini (creamy or chunky, your choice!)
- 2 cloves of garlic, minced (vampires beware!)
- Juice of 1 lemon (freshly squeezed, of course)
- 1/4 cup of nutritional yeast (for that cheesy flavor)
- Salt and pepper to taste (season like a boss!)
How to Make It:
1. Cook your pasta according to the package instructions. Drain and set aside.
2. In a large skillet, heat a bit of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
3. Lower the heat and add the tahini, lemon juice, and nutritional yeast to the skillet. Stir until well combined and heated through.
4. Toss in the cooked pasta and mix until it's fully coated in the creamy tahini sauce. Season with salt and pepper to taste.
5. Serve hot and garnish with fresh herbs, crushed red pepper flakes, or a sprinkle of sesame seeds!
